I began my journey with nutrition in late 2012. Yes, I get the point that nutrition has been a part of my life since birth. However, proper nutrition has been elusive for the majority of my life leading up to the end of 2012. Oh sure, diets have ebbed and flowed and always fell short. Shocking... right? What I needed more than a diet was an education in nutrition. I don't just mean the What's on my plate diagram (which is woefully misguided) or the ridiculous food pyramid. No. I needed to learn about HOW nutrition impacted my body and WHY nutrition from whole food is so important.
So, I became a Certified Holistic Nutritionist (effective March 2016). Go education! Through the certification process/ course, I have learned the hows and the whys... well, I'm still learning, but I have a much better foundation.
Like any passionate person, as I grew in my knowledge of nutrition I began blessing my family with changes that matched what I was learning. Over the years that has played out in ways like: switching to almond milk from cow's milk, ditching soda or sugary drinks (I still have coffee... Go coffee!... and tea- because I'm part Brit), buying products with seals of accountability (organic, Non-GMO Project Verified, USDA Organic, etc), rejecting products with additives and preservatives, and in recent months it's meant cutting WAY back on animal protein (aka meats). Prior to Dempsey's cancer diagnosis, I was this close to going fully raw. Haven't heard of that? Check it out. I implore you.
Now, lets talk about how my nutritional education and implementation are playing a key role in helping Dempsey thrive during cancer "treatment". While the doctors are pumping my son full of toxic chemicals in the form of chemotherapy, steroids, antibiotics, antiemetics (anti-nausea), and who knows what else... I am stuffing my child with nutritious, life-giving compounds such as carotenoids, grain oils, proteins, vitamins, minerals, and a bunch of other compounds from whole foods our bodies know how to utilize.

We use a combination of these organic ingredients in our juice and LOVE our Breville JE95XL Juicer (although I would now recommend a higher powered juicer). We soak all our produce in NEOLIFE's Green- a kelp-based cleaner.

What a day of nutrition looks like for Dempsey...
>>ORGANIC EVERYTHING!!!<< Breakfast is a NEOLIFE Shake (according to the recipe in column to left), usually chocolate but we use all three flavors. This provides a great source of protein and fiber along with vitamins and minerals. The added nutritionals boost immune support, help with detoxification, and promote cellular health. If he has an infusion or procedure appointment, he drinks at least 4oz before the appointment and will drink ounces 5-12 during and/or after the appointment. This helps protect his ENTIRE digestive system and his urinary tract. We make 1-2 smoothies per day. We make juice 1-2 times per week, sometimes more. We make most of our meals from whole foods (not from a box, can, or bag). Snacks/ lunches consist of mainly fruits and some veggies. Things like apple slices, bananas, berries, carrots... For added crunch we enjoy chips like the Way Better brand's sweet potato and sprouted grain chips. We found them, once, at Costco. The kid LOVES him some ketchup so, to feel better about that, we use Annie's Ketchup. We still have to be careful because it contains sugar, albeit organic, and cancer thrives on sugar. To go with his ketchup, he loves quesadillas... mainly they just serve as a vessel to get the ketchup from his bowl to his mouth. I try to limit the amount of cheese and we use organic flour tortillas as well as clean animal protein sources. Dinners are varied. Sometimes it's another shake or smoothie depending on his appetite. Often it's wild-caught fish with steamed or sauteed veggies and a whole grain or carb. We do organic, free-range chicken (from Costco) also. "Dessert" is raw fruit or a smoothie. Recently I found a delicious Keto recipe for Chocoalte Lava Cake. When we do this dessert we add a small scoop of organic vanilla ice cream. We go slumming once a week, to Chick fil-A or a select burger joint because, lets be real, we're not dead! |
